VANCOUVER: Two of Canada’s largest cheese producers, Saputo and Kraft, are evaluating whether to take their challenge over federal rules on cheese composition to Canada’s Supreme Court.
Under the federal rules the government has set a minimum level of liquid milk to be used in cheese production which will increase costs for cheese producers and paying consumers.
Although the rule is set to benefit dairy farmers, cheese producers are arguing this move will threaten cheese-making in Canada.
The challenge demonstrates that even large producers are struggling with restrictions imposed within Canada around use of dairy products, which increases prices for all consumers.
